ABSTRACT

Information on the knowledge and ways of using food and medicinal plants by traditional populations, family farmers and Brazilian native population in the Amazon is essential to guarantee the food sovereignty of these groups. This study was conducted using semi-structured interviews applied to local respondents. A total of 269 species of both non-conventional food plants and medicinal plants were identified, distributed in 83 botanical families and 198 genera. The Arecaceae and Lamiaceae families had the highest species richness (11 and 7, respectively). The Shannon-Wiener (H') and Pielou (J') diversity indices were considered high (5.02 and 0.9, respectively) when compared to other ethnobotanical works. In the environment in which these families are found, these species become the only food and medicinal resources available.


La información sobre los saberes y formas de uso de las plantas alimenticias y medicinales por parte de las poblaciones tradicionales, agricultores familiares e indígenas brasileños en la Amazonía es fundamental para garantizar la soberanía alimentaria de estos grupos. Este estudio se realizó utilizando entrevistas semiestructuradas aplicadas a encuestados locales. Se identificaron un total de 269 especies tanto de plantas alimenticiasno convencionales como de plantas medicinales, distribuidas en 83 familias botánicas y 198 géneros. Las familias Arecaceae y Lamiaceae tuvieron la mayor riqueza de especies (11 y 7, respectivamente). Los índices de diversidad de Shannon-Wiener (H') y Pielou (J') fueron considerados altos (5,02 y 0,9, respectivamente) en comparación con otros trabajos etnobotánicos. En el ambiente en que se encuentran estas familias, estas especies se convierten en los únicos recursos alimenticios y medicinales disponibles.

ABSTRACT

Abstract: The strict sanitary inspection legislation of animal source food has been considered a trade barrier for smallholder farmers and small-scale producers in Brazil. In this sense, law flexibilization is suggested to facilitate national trade of these products. We conducted a social and sanitary analysis, presenting the current Brazilian conjuncture and difficulties for animal source food Brazilian inspection law flexibilization. By discussing inequalities, human rights issues, animal source food legislation, and international food safety standards, we evidenced critical barriers for legislative reform in Brazil. Among these barriers, the main ones are social inequalities; high zoonotic risk of animal source food products; the Brazilian political structure and its reflection on different inspection practices among country jurisdictions; and the lack of inspection services in most Brazilian municipalities. At the same time, we present positive updates in the normative framework, and point out game-changers to modify the actual safety and trade situations of Brazilian small-scale and artisanal animal source food products, including policies to strengthen state and municipal inspection services and harmonization initiatives based on international standards and national legislation. We also suggest policies to implement inspection services in municipalities, whether by municipal action or by a consortium, as well as policies to strengthen technical assistance and rural extension for small-scale and artisanal producers. These policies aim to reduce technical and sanitary education inequalities and build a fairer animal source food system.


Resumo: A rigorosa legislação de inspeção sanitária de alimentos de origem animal tem sido considerada uma barreira comercial para agricultores familiares e pequenos produtores no Brasil. Nesse sentido, sugestiona-se a flexibilização das leis para facilitar o comércio nacional destes produtos. Realizamos uma análise sociosanitária, apresentando a atual conjuntura brasileira e apontando as dificuldades para a flexibilização da lei de inspeção de alimentos de origem animal. Discutindo as desigualdades brasileiras, os direitos humanos, a legislação brasileira sobre alimentos de origem animal e as normas internacionais de segurança de alimentos, evidenciamos pontos críticos que constituem o desafio para a reforma da legislação, sendo eles: desigualdades sociais; alto risco zoonótico de produtos de origem animal; a estrutura política brasileira e seu reflexo nas diferentes práticas de fiscalização entre as jurisdições do país; e a falta de inspeção oficial na maioria dos municípios brasileiros. Ao mesmo tempo, apresentamos atualizações positivas no arcabouço normativo e apontamos divisores de águas para modificar a real situação de segurança e comércio dos produtos de origem animal brasileiros de pequena escala e artesanais, incluindo políticas relacionadas ao fortalecimento dos serviços de inspeção estaduais e municipais e iniciativas de harmonização com base em padrões internacionais e legislação nacional; políticas de implantação dos serviços de inspeção oficial nos municípios, seja por ação municipal ou por consórcio; e políticas de fortalecimento da assistência técnica e extensão rural para pequenos produtores e produtores artesanais, em prol da redução das desigualdades na educação técnica e sanitária e construção de um sistema alimentar de origem animal mais justo.


Resumen: La estricta legislación de inspección sanitaria de alimentos de origen animal ha sido considerada una barrera comercial para los agricultores familiares y pequeños productores en Brasil. En ese sentido, se sugiere flexibilizar la ley para facilitar el comercio nacional de estos productos. Realizamos un análisis sociosanitario, presentando la coyuntura actual brasileña y señalando las dificultades para flexibilizar la ley de Inspección de alimentos de origen animal. Al discutir las desigualdades brasileñas, los derechos humanos, la legislación brasileña sobre alimentos de origen animal y las normas internacionales de seguridad alimentaria, destacamos puntos críticos que constituyen el desafío para la reforma de la legislación, a saber: desigualdades sociales; alto riesgo zoonótico de los productos de origen animal; la estructura política brasileña y su reflejo en las diferentes prácticas de inspección entre las jurisdicciones del país; y la falta de inspección oficial en la mayoría de los municipios brasileños. A la vez, presentamos actualizaciones positivas en el marco normativo y señalamos parteaguas para cambiar la situación real de seguridad y comercio de los productos de origen animal brasileños de pequeña escala y artesanía, incluidas políticas relacionadas con el fortalecimiento de los servicios de inspección estatales y municipales e iniciativas de armonización con base en normas internacionales y legislación nacional; políticas para la implementación de servicios oficiales de inspección en los municipios, ya sea por acción municipal o por consorcio; y políticas para fortalecer la asistencia técnica y la extensión rural a pequeños productores y productores artesanos, para reducir las desigualdades en la educación técnica y sanitaria y construir un sistema de alimentos de origen animal más justo.

ABSTRACT

This paper describes the principles and practices of effective food safety risk communication developed under the “Asia-Pacific Economic Cooperation Food Safety Risk Communication Framework and Associated Guidelines”. The framework recommends that effective food safety risk communication needs to be centered on the clear goal of protecting consumer health by ensuring transparency and timeliness, and communication on food safety matters should be conducted in a two-way process. It emphasizes the need to provide the public with credible information based on science and evidence and highlights that food safety is a shared responsibility among all stakeholders, including industry, government agencies, media organizations and consumers. It further highlights that food safety risk communication needs to be conducted in a consistent, systematic, inclusive, consultative, and preventative manner. The framework also indicates that effective food safety risk communication needs to pay attention to the backgrounds, experiences, and needs of concerned audiences. It stresses the importance of continuous improvement of the communication system to ensure food safety risk communication to be effective. Focusing on effective communications in response to food safety incidents, emergency or crisis situations, as well as everyday food safety communications, these principles and practical guidelines will help food safety regulators, food industry, food safety educators and other stakeholders improve their communications with target audiences.

Resumen: Objetivo: Determinar el grado de seguridad y de inseguridad alimentaria de estudiantes universitarios y sus hogares en período de pandemia por COVID-19. Materiales y métodos: Se realizó un estudio transversal, observacional con 110 estudiantes universitarios de la facultad de nutrición de la región Xalapa de la Universidad Veracruzana (UV), mediante una encuesta en línea en la que reportaron información individual y de los integrantes de sus hogares. La encuesta en línea se alojó en la plataforma del sistema de encuestas de la Coordinación Universitaria de Observatorios (CUO) de la UV y se aplicó durante el mes de noviembre de 2020. Resultados: Debido a la situación de pandemia, la mitad de los encuestados refirió que sus gastos en alimentación disminuyeron, esto también se vio afectado debido a que, en este período, en el 15.4% de los hogares, entre 1 y 2 integrantes del hogar perdieron su empleo o la fuente de ingresos. Se identificó una prevalencia de hogares en seguridad alimentaria de un 82.72 %, un 12.73% de inseguridad leve y 4.55 % de inseguridad moderada; 83.6% de los hogares presentaron alteraciones leves en su dieta; casi la mitad (45%) mantuvo el mismo patrón de consumo de alimentos procesados y ultra procesados. Conclusiones: Se necesita promover intervenciones educativas en el contexto universitario que favorezcan hábitos saludables de los estudiantes y un acceso a productos nutritivos y variados, y con ello procurar una mejor seguridad alimentaria.


Abstract: Objective: To determine the degree of security and food insecurity of university students and their homes in the period of the COVID-19pandemic. Materials and methods: A cross-sectional, observational study was carried out with 110 university students from the faculty of nutrition in the Xalapa region of the Universidad Veracruzana (UV), through an online survey in which they reported individual information and information on their household members. The online survey was hosted on the platform of the survey system of the University Coordination of Observatories (CUO) of the UV and was applied during november 2020. Results: Due to the pandemic situation, half of the respondents reported that their food expenses decreased,this was also affected because, in this period, in 15.4% of households, between 1 and 2 household members lost their job or source of income. A prevalence of households in food safety of 82.72% was identified, 12.73% mild insecurity and 4.55% moderate insecurity; 83.6% of the households presented slight alterations in their diet; almost half (45%) maintained the same pattern of consumption of processed and ultra-processed foods. Conclusions: It is necessary to promote educational interventions in the university context that favor healthy habits of students and access to nutritious and varied products, and with this, seek better food safety.

ABSTRACT

Identificar irregularidades em restaurantes pode auxiliar a minimizar riscos de contaminação. O objetivo desse estudo foi analisar as irregularidades registradas em inspeções sanitárias de restaurantes e similares em Curitiba, Brasil, entre 2005 a 2017. A descrição das irregularidades foi organizada seguindo as categorias e os itens da legislação de Boas Práticas (BP) para serviços de alimentação do Brasil e as cinco chaves para uma alimentação mais segura, definidas pela Organização Mundial da Saúde. Do total de 4.098 registros, houve a descrição de 8.327 irregularidades. Em relação às BP, houve a prevalência da descrição de irregularidades nos anos de 2005, 2006 e 2013, e das categorias: edificações, instalações, equipamentos, móveis e utensílios (42,80%); preparação do alimento (11,54%); documentação e registro (9,92%) e matéria-prima, ingredientes e embalagens (9,06%). Em relação às cinco chaves para uma alimentação mais segura, apenas 3.209 (38,53%) descrições correspondiam a esse tema, com destaque a: manter a limpeza (40,70%) e usar água e matérias-primas seguras (34,71%). Houve uma tendência decrescente na descrição das irregularidades no período estudado, porém ainda é um desafio implementar as BP em restaurantes e similares no Brasil, o que pode favorecer a ocorrência de doenças e aumentar o risco à saúde da população.


Identifying irregularities in restaurants can help minimize contamination risks. The objective of this study was to analyze the irregularities recorded in sanitary inspections of restaurants and similar establishments in Curitiba, Brazil, between 2005 and 2017. The description of the irregularities was categorized following the items and criteria outlined in the Good Practices (GP) legislation for food services of Brazil and the Five Keys to Safer Food, defined by the World Health Organization. Out of the total of 4,098 records, 8,327 irregularities were documented. Concerning GP, there was a prevalence of irregularities described in the years 2005, 2006 and 2013, mainly in the following categories: buildings, installations, equipment, furniture and utensils (42.80%); food preparation (11.54%); documentation and registration (9.92%) and raw materials, ingredients and packaging (9.06%). Regarding the Five Keys to Safer Food, only 3,209 (38.53%) corresponded to this theme, with particular emphasis on maintaining cleanliness (40.70%) and using safe water and raw materials (34.71 %). The study observed a declining trend in the description of irregularities over the study period. However, the successful implementation of GP in restaurants and similar establishments in Brazil remains a challenge, potentially favoring the occurrence of foodborne diseases and increasing the risk to public health.

ABSTRACT

The contamination of the environment with heavy metals is one of the challenges that make up Sierra Leone's environmental problem, with urbanization being one of the main causes; due to the lack of proper waste dumpsites and landfills for infrastructural development, rivers, and streams are polluted. The loss of biodiversity, but river and stream pollution have a significant impact on aquatic life. Animals and plants in contaminated water sources "may perish or reproduce improperly". This study assessed the level of concentration of heavy metals namely; chromium (Cr), iron (Fe), copper (Cu), zinc (Zn), and lead (Pb) in some commonly-consumed vegetables like Manihot esculenta (Cassava) leaves, Ipomoea batatas (Potato) leaves, Amaranthus viridis (African spinach), Corchorus olitorius (Krain krain); Solanum lycopersicum (Tomatoes); Cucumis sativus (Cucumber); Brassica oleracea (Cabbage); Abelmoschus esculentus fruits (Okra); Capsicum annuum (Bell Pepper); and Lactuca sativa (Lettuce) which were all purchased at local market places in Freetown. The vegetable samples were analyzed using an X-ray fluorescence machine (XRF) to determine their heavy metal concentration. The goal was to determine the food safety status of the vegetables by comparing the results to the maximum permissible limit (MPL) for vegetables, as set by WHO/FAO. The levels of Zn, Cr, Fe, Cu, and Pb in all vegetable samples varied from 4.70 – 5.69 %; 3.46 – 4.58 %; 4.00 – 4.52 %; 2.87 – 3.42 %; and 0.5 – 1.2 %, respectively. This result indicates that the metals were present at unsafe levels. According to the result, the maximum concentration values are much higher than the MPL value suggested by WHO/FAO for vegetables, implying that eating vegetables from the source market sites in this study may pose a health risk to humans. Heavy metals in vegetables should be monitored on a regular basis to prevent excessive accumulation of these heavy metals in the human food chain. When it comes to vegetable marketing, certain precautions should be implemented.

ABSTRACT

Consumption of fruits and vegetables which are known to be highly nutritious has been linked to foodborne disease outbreaks which constitute food safety and public concern. This study aimed to assess the safety of selected fruits and vegetables from fruit markets and home gardens, within the South-West region of Nigeria. A total of fifty-three (53) samples of watermelon, cucumber, tomatoes and garden eggs were collected and subjected to microbiological analysis. Isolated bacteria were screened for their pathogenicity and spoilage potential using haemolysis and amylase production tests respectively. A total of 146 bacteria were isolated, 75 (45.7%) were from retail samples and 71 (43.3%) from the home garden. The genera: Bacillus (15.9%), Corynebacterium (11.0%), Lactobacillus (1.2%), Listeria (1.8%), Staphylococcus (12.8%), Enterococcus (1.2%), Micrococcus (1.2%), Acinetobacter (3.7%), Aeromonas (2.4%), Alcaligenes (0.6%), Brucella (0.6%), Vibrio (0.6%), and the family Enterobacteriaceae (36.0%) were identified. Isolates with haemolytic potentials were 51 (31%) while 49 (30%) could cause spoilage. The overall microbiological quality and safety of fruit and vegetable samples analysed in this study is low, as they were contaminated by diverse pathogenic, and spoilage microorganisms. The presence of these pathogens in retailed and home garden fruits and vegetables is a pointer to public health risks and food safety threats. Hence, the need for improved hygienic practice through training handlers along the supply chain.

La leche materna donada es un recurso de alto valor que puede ser utilizado para la alimentación de neonatos hospitalizados y a término, por tanto, garantizar su inocuidad es imperativo. Esta revisión de literatura reúne los principales peligros de naturaleza física, química y microbiológica identificados en leche materna, con la intención de proveer una referencia que los consolide de tal forma que la información pueda ser utilizada por bancos de leche humana, gobiernos y agencias regulatorias para establecer mecanismos para su prevención y control. Se realizó una revisión de literatura entre agosto del 2021 y octubre del 2022, utilizando buscadores y descriptores específicos para peligros de transmisión alimentaria en leche materna. Se incluyeron estudios publicados en español o en inglés. Se identificaron 31 agentes biológicos patógenos incluyendo bacterias, virus y parásitos. Como peligros químicos se reportaron medicamentos, drogas, cafeína, infusiones herbales, micotoxinas, alérgenos, especias, suplementos nutricionales, contaminantes ambientales y desinfectantes. Se alerta sobre la presencia potencial de plástico y vidrio de tamaño menor a 7 mm proveniente del ambiente de extracción y recipientes. La presencia de peligros microbiológicos y químicos en leche materna puede darse por transmisión vertical, temperaturas inadecuadas durante el almacenamiento y contaminación en el proceso. La presencia de peligros físicos se relaciona con la manipulación de los implementos en etapas posteriores a la extracción. Se requiere prestar atención a los hábitos de la madre para prevenir peligros químicos, así como más investigación relacionada con micotoxinas en leche materna(AU)


Donated breast milk is a highvalue resource which can be used to feed hospitalized neonates and full-term infants, therefore, ensuring its safety is imperative. This literature review presents the main hazards of physical, chemical and microbiological nature identified in human milk, with the intention of providing a reference that consolidates the reported hazards reported, so the information can be used by human milk banks, governments and regulatory agencies to establish prevention and control mechanisms. A literature review was carried out between August 2021 and October 2022, using search engines and specific descriptors for foodborne hazards in breast milk. Studies published in Spanish and English were considered. 31 pathogenic biological agents including bacteria, viruses and parasites were identified. Medications, drugs, caffeine, herbal infusions, mycotoxins, allergens, spices, nutritional supplements, contaminants of environmental origin and disinfectants were reported as chemical hazards. No physical hazards were identified, however the potential presence of plastic and glass smaller than 7 mm from the extraction environment or containers is alerted. Presence of microbiological and chemical hazards can be due to vertical transmission, inadequate temperature of storing, contamination during extraction, packaging, and infant feeding. Whereas presence of physical hazards is related to implements handling after extraction. Attention to hygiene and habits of the mother to prevent chemical hazards and further research related to mycotoxins in human milk is required(AU)

La adulteración y el fraude de productos alimenticios son tan antiguos como los sistemas de procesamiento y producción de alimentos, sin embargo, en la actualidad son cada vez más frecuentes. Con la globalización y los sistemas de producción y distribución de alimentos cada día más complejos, la adulteración puede ocurrir en distintos puntos de la cadena alimentaria y tener un impacto de gran alcance, e incluso, consecuencias adversas para la salud de las personas. Los enfoques regulatorios de la comunidad internacional para enfrentar y resolver el fraude alimentario están dispersos y en constantes ajustes. Se necesita un enfoque colectivo y coordinado para identificar a todos los interesados en la cadena de suministro de alimentos, calificarlos y certificarlos, excluir a aquellos que no cumplan con los estándares adecuados y rastrear los alimentos en tiempo real. Este artículo de actualización revisará conceptos claves asociados a la integridad alimentaria, historia del fraude alimentario y episodios de fraude alimentario de connotación pública en el mundo y en Chile, herramientas analíticas y alimentos más vulnerables al fraude, reglamentos y nuevas acciones en el mundo y en Chile para enfrentar la inocuidad y el riesgo de fraude alimentario.


Food adulteration and food fraud is as old as food production and processing however, it is increasingly prevalent today. With globalization and increasingly complex food production and distribution systems, adulteration can occur at different points in the food chain and may have far-reaching impacts and even adverse consequences for human health. The international community's regulatory approaches to confronting and resolving food fraud are scattered and in constant adjustment. A collective and coordinated approach is needed to identify all stakeholders in the food supply chain, certify and qualify them, exclude those who do not meet applicable standards, and trace food in real time. This update provides definitions and background on key concepts associated with food integrity, episodes of food fraud in Chile and the world, main foods vulnerable to food fraud, common fraud practices and analytical techniques, regulations and new actions in Chile and the world to face food safety and the risk of food fraud.

Ensuring food safety is paramount worldwide.Developing effective detection methods to ensure food safety can be challenging owing to trace hazards,long detection time,and resource-poor sites,in addition to the matrix effects of food.Personal glucose meter(PGM),a classic point-of-care testing device,possesses unique application advantages,demonstrating promise in food safety.Currently,many studies have used PGM-based biosensors and signal amplification technologies to achieve sensitive and specific detection of food hazards.Signal amplification technologies have the potential to greatly improve the analytical performance and integration of PGMs with biosensors,which is crucial for solving the challenges associated with the use of PGMs for food safety analysis.This review introduces the basic detection principle of a PGM-based sensing strategy,which consists of three key factors:target recog-nition,signal transduction,and signal output.Representative studies of existing PGM-based sensing strategies combined with various signal amplification technologies(nanomaterial-loaded multienzyme labeling,nucleic acid reaction,DNAzyme catalysis,responsive nanomaterial encapsulation,and others)in the field of food safety detection are reviewed.Future perspectives and potential opportunities and challenges associated with PGMs in the field of food safety are discussed.Despite the need for complex sample preparation and the lack of standardization in the field,using PGMs in combination with signal amplification technology shows promise as a rapid and cost-effective method for food safety hazard analysis.

Introdução: O consumo de comida de rua tem aumentado nos últimos anos, transformando este segmento em um importante comércio de alimentos, com geração de emprego e renda. Objetivo: Este trabalho teve como objetivo conhecer o perfil socioeconômico e analisar a percepção sobre a gestão do negócio e boas práticas de manipulação dos manipuladores de comida de rua no município de Niterói/RJ, participantes de um curso on-line sobre boas práticas de manipulação no comércio de comida de rua. Método: A metodologia foi aplicada e descritiva, de abordagem qualitativa e quantitativa. Foi utilizado questionário on-line, com 56 perguntas, aplicado a 67 participantes do curso. Resultados: 86,4 % eram mulheres; faixa etária predominante entre 27 e 62 anos; renda média de até 3 salários mínimos; 35,8% relataram possuir ensino superior incompleto. Apenas 29,9% possuem registro MEI; 72,7% atuam nesse comércio por escolha; 46,3% fazem controle de estoque e 62,5% fazem controle de caixa; 67,2% possuem cursos na área de alimentação; e 47,8% afirmaram ter experiências anteriores. Conclusão: À medida que se observa a consolidação desse segmento, com um potencial de risco sanitário associado, assim como a insuficiência de trabalhos científicos na área, faz-se necessário ampliar os estudos sobre a formação dos manipuladores.


Introduction: The Consumption of street food has increased in recent years, transforming this segment into an important food trade, with job and income. Objective: This work aimed to know the socioeconomic profile and analyze the perception about business management and good handling practices of street food handlers in the city of Niterói/RJ, participants of an online course on good handling practices in the food trade. Methods: The methodology was applied and descriptive, with a qualitative and quantitative approach. An online questionnaire was used, with 56 questions, applied to 67 course participants. Results: 86.4 % were women; predominant age group between 27 and 62 years; average income of up to 3 minimum wages; 35.8 % reported having incomplete higher education. Only 29.9 % have a MEI record; 72.7 % work in this trade by choice; 46.3 % carry out inventory control and 62.5% carry out cash control; 67.2 % have courses in the field of food; and 47.8 % claimed to have previous experiences.Conclusions:As the consolidation of this segment is observed, with a potential associated health risk, as well as the lack of scientific work in this area, it is necessary to expand studies on the training of handlers.

Introdução: No Brasil, a legislação exige maturação mínima de 60 dias para queijos produzidos com leite cru, salvo se houver comprovação científica de que a redução do prazo não compromete a segurança do produto, como ocorreu com alguns queijos artesanais tradicionais de diferentes regiões do estado de Minas Gerais. No estado de São Paulo, onde os produtores seguem formulações e processos específicos individuais, a falta de um padrão de pesquisa validado dificulta a avaliação da segurança microbiológica deste tipo de queijo, pois essas pesquisas são dispendiosas e não há garantia de que os parâmetros estabelecidos pelos pesquisadores seriam aceitos pelos serviços de inspeção. Objetivo: Para abordar este desafio, esta proposta visa estabelecer um modelo de pesquisa científica padronizado para avaliar a segurança de queijos de leite cru maturados por menos de 60 dias. Métodos: Com base na proposta do DIPOA para classificação de Risco de Estabelecimentos, foi criado um checklist para classificação dos estabelecimentos/produtos, considerando risco do produto, volume processado e características de desempenho do estabelecimento em relação às Boas Práticas de Fabricação.  Resultados: A pontuação obtida pela aplicação do checklist na produção do queijo em questão determina o risco do produto como baixo, médio, alto ou muito alto e auxilia no estabelecimento do número mínimo de amostras a serem avaliadas mensalmente. Discussão: Espera-se que essa pesquisa auxilie produtores e órgãos de registro, fiscalização e inspeção no processo de legalização dos queijos artesanais de leite cru, possibilitando o desenvolvimento rural e a fixação de mão de obra no campo. Introduction: In Brazil, the legislation requires a minimum ripening period of 60 days for raw milk cheeses, unless scientific evidence shows that the reduction in the ripening time does not compromise food safety, as seen with traditional artisanal cheeses from the state of Minas Gerais. In the state of Sao Paulo, where many producers have developed their own specific formulations and processes, the lack of a standardized validated research protocol for these types of cheese hinders their microbiological safety evaluation, since this type of research is costly and there are no guarantees that the parameters stablished by the researchers would be accepted by the inspection services. Objectives: To address this challenge, this proposal aims to stablish a standardized scientific research protocol for assessing the safety of raw milk cheeses ripened for less than 60 days. Methods: Based on the DIPOA (Department of Inspection of Products of Animal Origin) risk classification model for establishments, a checklist was created to categorize establishments/products, taking into consideration the product's risk, processed volume, and the establishment's performance assessed on the basis of good manufacturing practices. Results: The score obtained through the checklist application determines the final risk level of the product, categorized as low, medium, high, or very high, and helps determining the minimum number of samples to be evaluated monthly. Discussion: This research protocol may help producers, regulatory, inspection, and registration bodies in the legalization process of raw milk artisanal cheeses, enabling rural development and fixation of workforce in rural settings. ABSTRACT

A rastreabilidade de alimentos (RTA) é definida como um conjunto de procedimentos que permite detectar a origem e acompanhar a movimentação de um produto ao longo da cadeia produtiva, mediante elementos informativos e documentos registrados. A crescente complexidade da produção e distribuição de alimentos demanda o desenvolvimento de iniciativas que promovam maior segurança e qualidade de produtos. O objetivo deste trabalho foi realizar uma revisão da literatura científica sobre o conceito de rastreabilidade de alimentos e identificar as estratégias de aplicação desta ferramenta. Concluiu-se que a implementação da RTA está vinculada a ações governamentais por meio de legislações e órgãos de fiscalização, bem como o uso desta ferramenta ao longo da cadeia produtiva de alimentos requer cada vez mais recursos tecnológicos que possam integrar os diferentes agentes da cadeia de suprimentos.


Food traceability (RTA) is defined as a set of procedures that make it possible to detect the origin and monitor the movement of a product along the production chain, using information elements and registered documents. The growing complexity of food production and distribution demands the development of initiatives that promote greater product safety and quality. The objective of this work was to carry out a review of the scientific literature on the concept of food traceability and to identify strategies for applying this tool. It is concluded that the implementation of the RTA is linked to government actions through legislation and inspection bodies, as well as the use of this tool along the food production chain requires more and more technological resources that can integrate the different agents of the supply chain supplies.

ABSTRACT

Os biofilmes podem acarretar vários problemas em diversas áreas, principalmente na indústria alimentícia, já que sua colonização nas superfícies como aço inoxidável, polietileno, polipropileno, podem contaminar produtos, causando sua deterioração, além de possibilitar diversas doenças transmitidas por alimentos. A formação de biofilme pode ocorrer em diferentes tipos de superfícies e pode envolver diversos micro-organismos. Práticas adequadas de higienização na indústria de alimentos são fundamentais para manter medidas seguras de preservação da qualidade dos alimentos. Portanto, o presente estudo objetiva realizar levantamento bibliográfico para explanar a formação e caracterização de biofilmes, ressaltando sua importância na indústria de alimentos e os métodos de prevenção de biofilmes disponíveis. Pode-se observar a necessidade de novas tecnologias no controle e erradicação de Biofilmes.


Biofilms can cause several problems in different areas, especially in food, as their colonization on surfaces in industries such as stainless steel, polyethylene, polypropylene, can contaminate products, causing their deterioration, in addition to making various food-borne diseases possible. Biofilm formation can occur on different types of surfaces and can involve different microorganisms. Adequate hygiene practices in the food industry are essential to maintain safe measures to preserve food quality. Therefore, the present study aims to carry out a bibliographical survey to explain the formation and characterization of biofilms, highlighting the importance in the food industry and the available biofilm prevention methods. The need for new technologies in the control and eradication of Biofilms can be observed.

ABSTRACT

O objetivo do estudo foi avaliar a condição de insegurança alimentar e nutricional de famílias beneficiárias do Programa Bolsa Família, residentes no distrito sanitário oeste do município de Ribeirão Preto, São Paulo. Trata-se de um estudo transversal de um recorte populacional realizado de janeiro a outubro de 2018 com entrevista a 246 titulares do Programa Bolsa Família. Foram coletadas variáveis socioeconômicas, demográficas e insegurança alimentar e nutricional por meio da escala brasileira de insegurança alimentar. A insegurança alimentar e nutricional foi de 94,3%, das quais 27,6% apresentavam o nível moderado e 25,6% o grave. Houve predomínio de titulares do sexo feminino (97,6%), cor/ raça parda (54,9%), baixa escolaridade (53,3%) e desempregados (64,6%). A maior frequência de famílias beneficiárias pertencia ao estrato social intermediário (54%), residiam em casa própria (62,6%) e com crianças menores de sete anos (57,7%). Quanto às famílias, 60,4% recebiam o benefício há mais de 48 meses, 74,3% recebiam o valor de R$ 200,00 ou menos e 70,7% utilizavam a maior proporção para aquisição de alimentos. Evidenciou-se elevada vulnerabilidade das famílias estudadas, apontando a situação de privação alimentar e/ou fome experimentadas pelas famílias.


This study aims to evaluate the food and nutritional insecurity of families benefiting from the Bolsa Família Program residing in the western health district of the city of Ribeirão Preto, São Paulo. This is a cross-sectional study of a population subset carried out from January to October 2018 through interviews with 246 participants of the Bolsa Família Program. Socioeconomic and demographic variables and food and nutritional insecurity data were collected using the Brazilian Food Insecurity Scale. Food and nutritional insecurity were at 94.3%, of which 27.6% had a moderate level, and 25.6% had a severe level. There was a predominance of female heads of households (97.6%), mixed-race ethnicity (54.9%), a low education level (53.3%), and unemployed individuals (64.6%). The highest frequency of beneficiary families belonged to the intermediate social stratum (54%), resided in their own homes (62.6%), and had children under seven years old (57.7%). Regarding the families, 60.4% had received the benefit for more than 48 months, 74.3% received an amount of R$ 200.00 or less, and 70.7% used most of the funds to purchase food. The study highlighted a high vulnerability among the families, indicating a situation of food deprivation and/or hunger experienced by the families.

Introduction- Les additifs alimentaires sont utilisés pour prolonger la durée de conservation des denrées préparées ou édulcorer une boisson par exemple. Dans cette étude, nous dressons un état des lieux des additifs alimentaires utilisés dans quelques denrées alimentaires de large consommation commercialisées dans la ville d'Oran (Ouest Algérien). Matériels et méthodes- Une étude transversale descriptive a été réalisée au niveau des superettes et magasins d'alimentation générale de la ville d'Oran pour lister les additifs alimentaires incorporés à quelques aliments de large consommation Dans un premier temps, une étude descriptive transversale a été réalisée pendant trois mois au sein de trois structures hospitalières de l'Ouest algérien. Résultats-Au total, 114 additifs alimentaires ont été répertoriés. Tous les additifs inventoriés sont listés dans le journal officiel Algérien N°30 du 16 Mai 2012.Les additifs répertoriés ne sont pas sans risques pour la santé du consommateur. Certains additifs comme le colorant caramel ou SIN150d est retrouvé dans 3 marques locales de biscuits et 4 marques de boissons locales (17,5%) ; le benzoate de sodium ou SIN211 dans 12 marques de boissons et 2 marques de confiture (16,09%) ; le butylhydroxyanisole (BHA) ou SIN320 dans une marque de chocolat, de margarine et de chips (1,67%). Globalement, les étiquettes des produits sont conformes à la réglementation Algérienne à l'exception de quelques manquements comme la nature de l'arôme qui ne fut pas toujours spécifiée Conclusion-L'étude a révélé une importante utilisation des additifs alimentaires. Le niveau de risque pour la santé du consommateur que pourraient présenter ces substances nécessite une large sensibilisation du consommateur, notamment une consommation modérée des denrées alimentaires industriellement préparées.

Staphylococcus aureus is an important foodborne pathogen associated to food intoxication and other multiple infections in human being. Its presence in salted food is a serious issue due to its salt tolerance potential. A study was conducted to analyze the presence of enterotoxins producing drug resistance S. aureus in salted sea fish from Gwadar. Freshly persevered samples (n=50) of salted fish were subjected to analyze the presence of S. aureus using 16S rRNA and Nuc genes primers. The isolates were then evaluated for drug resistance and enterotoxins producing potential using specific primers for MecA (methicillin resistance gene), (SEA) staphylococcal enterotoxin A and (SEB) staphylococcal enterotoxin B genes. Total 13/50 (26%) of the samples were found positive for the presence of S. aureus, preliminary confirmed with biochemical profiling and finally with the help of target genes presence. The isolates were found showing 100% resistant to methicillin, which were molecularly confirmed by the presence of MecA gene present in genome. The isolates 5/13 (38%) were positive for SEA and 3/13 (23%) for SEB genes, whereas 2/13 (15%) were confirmed having both SEA and SEB genes in its genome. It was also confirmed that all the isolates were capable to form biofilm over the glass surfaces. It was concluded that the study confirmed the presence of enterotoxigenic methicillin resistance Staphylococcus aurous (MRSA) in salted fish product, that poses gross food safety concern. Preventive and control measures are necessary to handle this serious food safety concern.

Objective@# To investigate the contamination of foodborne pathogens in market-sold food in Fuyang District, Hangzhou City, so as to provide insights into intensified supervision of food safety and management of foodborne diseases.@*Methods@# A total of 1 176 market-sold food samples belonging to 11 categories were collected from Fuyang District from 2019 to 2022, and nine foodborne pathogens, including Salmonella, Vibrio parahaemolyticus and Yersinia enterocolitica, were detected according to the National Handbook for Surveillance of Risk of Food Contamination and Hazardous Factors in 2019 and national criteria for food microbiological testing. The detection of foodborne pathogens was analyzed in food samples with different categories and sources. @*Results@#Foodborne pathogens were detected in 332 out of 1 176 market-sold food samples, with a detection rate of 28.23%, and the detection rates of V. parahaemolyticus, Enterobacter sakazakii, non-O1/non-O139 V. cholerae, Y. enterocolitica, Vibrio vulnificus, Bacillus cereus, Staphylococcus aureus, Salmonella and Listeria monocytogenes were 39.47%, 36.92%, 35.48%, 34.09%, 13.85%, 12.26%, 8.58%, 6.65% and 2.53%. The detection rates of foodborne pathogens were 38.36%, 24.90%, 15.48%, 11.90%, 5.68%, 5.56%, 4.48%, 1.67%, 1.25% and 0.81% in aquatic food and its products, meat and meat products, local specialty food, catering food, flavoring, foods for special dietary uses, milk and milk products, egg and egg products, cooked food and other food, respectively, while foodborne pathogens were not detected in frozen drinks. In addition, the detection rates of foodborne pathogens were 24.97%, 15.19%, 9.88%, 7.89% and 7.23% in farmers' markets, supermarkets, online stores, vendors and restaurants, respectively. @*Conclusions@#A high detection rate of V. parahaemolyticus, E. sakazakii and non-O1/non-O139 V. cholerae was found in market-sold food in Fuyang District from 2019 to 2022, and the contamination of foodborne pathogens was serious in aquatic food and its products, meat and meat products and local specialty food.

Over the past three years, by combining the needs of the citizens in Shanghai and the routine food safety spot-checking plan through the food safety “you order,I inspect” activities, the administration has enabled the public to perceive and evaluate the quality of the inspection services, and has actively built a food safety social co-governance service brand. While ensuring that people can eat at ease and buy at will, we will also boost consumer confidence and promote high-quality development of food safety, so as to create a vivid picture of people participating in and benefiting from food safety governance.
